麻糍 muaci

This is also done on Hari Wesak, just for fun, but my kids like it very much, because of the peanuts, they eat a lot.

Recipe from Mikiko.


Ingredients & method of doing this Muaci:
1. Glutinous rice flour 250g, water 375g, sugar 3tbsp - mix together.
2. Wipe some oil on the plate, pour in the mixture, steam with small fire for 40 min.
3. Let it cool for a while after steam, use spoon to take out 1 by 1, put into the crushed peanut & sugar, and mix together.
And now you can enjoy the Muaci.

失败之Japanese Cotton Cheese Cake

Today is a holiday, plan to go shopping, but last minute cancel.
So nothing to do at home, sure will do some baking.
But so unlucky, today's result - failed.

And this is the one that I baked last time.

I don't know why it will fail today, maybe the temp is too high - but I set it to 160c only, or too many eggs - this time I use 6 eggs, or the cake mould is too small - 8 inch only.
Never mine, 失败乃成功之母, 下一次再努力,嘻嘻!

香蕉巧克力方块 Chocolate-Bottom Banana Square

This is follow recipe from Min's

牛油 113g
细糖 60gm
蛋 1个
香蕉 200gm, 压烂
面粉 180g
发粉 1tsp
苏打粉 1tsp
盐 1/2tsp
可可粉 30g
巧克力豆 1杯/适量
慢慢加入蛋液, 香草精和香蕉,继续拌打成光滑的奶油状。
把其中一半面糊, 加入可可粉拌匀。 把这份面糊倒进9寸的方形烤盘。
再把剩余的面糊倒进去, 用刀轻轻在面糊上画几下, 以呈现大理石状。
放入预热180‘C的烤箱, 烤大概30分钟。

Tasted good, all being eaten by my kids in one day.

Zebra Cake

Don't know what to bake for my kids to take for go to school on Saturday, so just make this simple zebra cake for them.
I followed the recipe but cut the ingredient to half, coz I just want to bake a loaf.

Yesterday make these pizzas as dinner, all my kids enjoy eating these, but they prefer without the green pea, so I made 2 tuna fish pizza without pea and 1 with all the green peas and onion. 2 for kids and 1 for me and my husband.

家庭自制pizza酱9大勺(I use ready made pasta 酱) ,马苏里拉芝士(Mozzarella)360克,金枪鱼、火腿、青椒适量。


12、涂抹好pizza酱后,均匀撒上一层马苏里拉芝士, 撒上火腿丁, 铺上金枪鱼,撒上青椒.

Here is my baby Jayden -9 months old now, I missed him today, he is with my SIL, who take care of him during week day, can't wait to see him again tonight. Yeh...

Pandan Coconut Bread (香兰椰子面包)

Basic Sweet Bread Dough

Overnight Sponge Dough
Bread Flour 100g
Boiling Water 70g

Main Dough

Bread Flour 300g
AP Flour 100g
Sugar 80g
Salt 6g
Milk Powder 20g
Instant Yeast 9g
Cold Water 175g
Cold Eggs 60g (about 1 large egg)
Butter 60g

To make the sponge dough:

1.mix together bread flour and boiling water until a dough forms. Cover with plastic and set asie to cool. When cooled, place in refrigerator for at least 12 hours.

To make the main dough:

1.In the bowl of your stand mixer with the dough hook attachment, mix together the flours, sugar, salt, milk powder, and yeast until well-blended.
2.Add in the cold water and eggs. Knead with the dough hook until a rough dough forms.
3.Then add in the sponge dough followed by the butter.
4.Knead the dough on medium speed for 3 to 5 minutes until the dough becomes elastic. When you pull it apart the dough will be springy and not too sticky.
5.Let the dough proof until it has doubled in size and an indentation remains when pressed. About 40 to 90 minutes.

Pandan Coconut Filling

Butter 70g
Sugar 120g
Egg 1 large one
Shredded unsweetened coconut 110g
Milk powder 50g
Pandan paste 1 tsp

1.Cream butter and sugar until light and fluffy.
2.Add in egg, beat until smooth.
3.Add in coconut and milk powder. When well-combined, add in pandan paste and mix evenly.
4.Shape the coconut filling into sixteen 35g balls and set aside.
5.Next, divide the sweet bread dough into 60g balls.
6.And shape the bread.
7.Place each roll on a parchment paper lined pan, and allow it to proof until it has roughly doubled in size (about 1 hour)
13.Brush with egg wash and bake at 180c for 15 minutes, or until golden brown.
